Cultural Diversity:  African American Eating in America

Many foods that African Americans eat are rich in nutrients.  Foods such as:

·       Collard greens and other leafy greens

·       Yellow vegetables

·       Beans

·       Rice

·       Potatoes

Other parts of their diet are low in:

·       Fiber

·       Calcium

·       Potassium

 

*High in fat.

This kind of lifestyle has led to:

            ·   Diabetes

            ·   Hypertension

            ·   Heart Disease

            ·   Obesity

 

A majority of the population of African Americans have a low income and may have no other choice than to eat what is available at low cost.  Some foods are not available to most African Americans because of their high cost, such as:

·       Fresh fruits

·       Vegetables

·       Lean meat

·       Seafood
