Influence
Chinese influence was discovered from the noodle dishes: pancit
bihon, pancit miki, pancit canton and pancit sotanghon. Noodle restaurants
are called panciterias (another Spanish derivation) a term that usually
refers to a Chinese eatery. Filipino’s favorite Chinese food when order
is the pancit Canton with the lumpia shanghai. Pancit palabok and pancit
malabon are the different variations of noodles. The difference lies on
the used of garnishing and flavoring and the type of noodle that is used.
Pancit palabok is one of the best among Filipino families. It gives
distinctive taste of shrimp and other spices. Best severed with
hard-boiled egg, fish sauce and lemon. Pancit malabon has many versions,
but most Filipinos serve the noodles, called bihon sariwa, and the
mixtures called sahong. There would be fresh shrimps, the dark variety
called swabe. There would be pork cubes, smoked fish (tinapa) that was
just bought and shredded, newly cooked chicharon which was pounded to bits
and sliced native pechay.
