(For the following recipes you will need an ice cream maker.)
Chocolate Ice Cream
[1 quart]
1 cup milk
3/8 cup cocoa
1/3 cup sugar
2 eggs
1 cup cream
Beat eggs,Beat in 1/6 cup of sugar. Set aside.
Mix milk and cocoa and remaining half cup of sugar. Heat just short of boiling.
Stir hot
milk/cocoa in to eggs.
Cool. Add cream. Add to Home Made Ice Cream Maker.
Pumpkin Ice Cream
14 oz can of pumpkin
1/2 cup brown sugar
1/4 tsp cinnamon
1/8 tsp nutmeg
1/4 tsp ginger
1/2 cup maple syrup
1 cup milk
2 cups whipping cream
Mix ingredients, COOL! and pour into Home Made Ice Cream Maker
Tastes like pumpkin pie
Honey Apple Cinnamon Raisin Walnut Ice Cream
1/3 cup raisins
1 cup water
1 cup whole milk
1 cup half and half
1/2 cup honey
4 egg yolks
1/4 cup apple syrup
1 cup cream
1 tsp cinnamon
1/3 cup chopped walnuts
Soak the raisins in the water overnight Beat egg yolks in a bowl
Mix milk, half and half, and honey in a pan. Heat to a boil. Pour half of milk/honey
mixture into egg yolks,
beating while you pour. Beat well, and beat into remaining milk/honey mixture
in pan. Mix over low heat
for 3-5 minutes Mix in apple syrup Let COOL and add cream. Right before adding
to ice cream maker, beat
in cinnamon. Drain raisins and mix with walnuts When ice cream has stiffened
(2 minutes before done), add
raisins and walnuts
Blueberry
1 1/2 Cups Whole Milk
1/2 cup sugar
2 eggs
1 tablespoon pure vanilla extract
1 cup whipping cream
4 cups pureed blueberries
Beat eggs lightly. Beat in sugar slowly, beating an additional 1 minute after
all sugar is
added. Heat milk almost to a boil, and add (still hot) to the egg mixture, stirring
constantly.
Cool. Add chilled cream,vanilla,blueberries and pour into Home Made Ice Cream
Maker.
Excellent
Marshmallow Vanilla
10 large marshmallows
1 cup milk
1/4 cup sugar
1 cup whipping cream
1/2 tsp vanilla
Mix marshmallows, 1/2 cup of milk, and sugar in a pan. Heat over low heat
until marshmallows melt. Add
remaining ingredients and Cooll.
Pour in Home Made Ice Cream Maker. Notes: A little sweet, a little icy, not very
rich. Perhaps make with 2
eggs (technically not needed, as marshmallows should have emulsifiers)
Cranberry Ice Cream
1 cup cranberries
3/4 cup apple juice
1/4 cup brown sugar
1 cup half and half
6 egg yolks, beaten
3/4 cup sugar
2 cups table cream
1 cup cranberries
1 tsp vanilla
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon cloves
Mix 1 cup cranberries, apple juice, and brown sugar in sauce pan. Heat until
cranberries begin to pop.
Remove from heat, separate berries and liquid. Beat sugar into eggs. Heat half
and half, pour into eggs, and
then return to milk/egg mixture to sauce pan and heat. Add 1/4 cup of apple juice/brown
sugar liquid. Puree
in a blender the cranberries, milk and eggs mixture, with vanilla and spices.
Cool. Heat remaining
cranberries in remaining liquid until they pop. Discard liquid and cool berries.
Add cream to milk/egg/etc
mixture, pour in ice cream maker. Shortly before done, add remaining cranberries.
Maple Walnut Ice Cream
2 cups table cream (18% milk fat)
1 cup milk
1 cup amber maple syrup
4 egg yolks, beaten
1 cup walnut pieces
Heat cream, milk, and ma ply syrup until hot. Stir into beaten eggs yolks.
Cool.
Pour in HomeMade Ice Cream Maker
When almost done, add walnuts.
Chocolate Maple
[1 quart]
2 cups table cream
1 cup milk
1/2 cup cocoa, sifted.
4 eggs yolks, beaten
1 1/2 cups maple syrup (amber)
Mix heat cream and milk, stir in cocoa. Heat just short of boiling. Beat syrup
into egg
yolks. Stir hot milk/cocoa in to eggs.
Cool. Add to Home Made Ice Cream Maker
Mandarin Chocolate
1.5 oz bittersweet chocolate
5 Egg Yolks
3/4 cup sugar
2 cups half-and-half
5 tbl. cocoa powder
2 cups table cream
1.5 tsp orange extract
Beat eggs yolks together with 1/2 cup sugar Melt chocolate over low heat
Warm
half-and-half to a near boil Mix heated half-and-half with cocoa powder
and 1/4 cup sugar.
Add to melted chocolate. Add heated half-and-half/chocolate mixture to
beaten egg yolks
Cool. Add cream and orange extract.
Pour into Home Made Ice Cream Maker.
