Easy Puttanesca Sauce:
Roasted red peppers in a jar are a great convenience food. Keep a couple of jars on hand for quick homemade meals. Serve this robust sauce over pasta mixed with cooked shrimp or cannellini beans.
1 26-ounce (780-g) jar plain spaghetti sauce
3/4 cup (6 oz/180 g) chopped roasted red peppers
6 - green olives, preferably imported, sliced
2 teaspoons capers, rinsed and drained
1 - garlic clove, minced
1 or 2 - pinches crushed red pepper flakes
2 tablespoons chopped fresh parsley, preferably Italian flat-leaf
Preparation - Estimated cooking time: Under 30 minutes -
1 In a large saucepan, heat spaghetti sauce over medium heat. Stir in chopped peppers, olives, capers, garlic and red pepper flakes. Simmer for 5 minutes to blend flavors.
2 Shortly before serving, stir in parsley.
Number of Servings: about 3 3/4 cups (30 oz/900 g); serves 4.
