Mars Bar Mint Cheesecake
1. Soak gelatin in cold water then heat water, add chopped Mars Bars and stir over low heat until melted. Add gelatin and stir until dissolved.
2. Cream the cheese, sugar, vanilla, peppermint essence and lemon juice until smooth. Blend in gelatin mixture and chill until beginning to set. Combine biscuit crumbs and melted butter and press into the base and sides of a 23cm (9 inch) spring form pan. Chill.
3. When gelatin mixture is beginning to thicken, whip at low speed while gradually adding the well chilled evaporated milk. Beat at high speed until the mixture doubles in volume. Pour into prepared crust and chill overnight. If desired, decorate with whipped cream and glazed cherries. Makes 10 servings.
