Science Experiment: To spice or not to spice

While trying to duplicate Miss Kate Barlow's prizewinning spiced peach recipe, I started to wonder if my spiced peaches would really be able to last longer than regular peaches. I put a few regular canned peaches in a cup and a few of my spiced peaches in another and left them out on the counter.

I was quite surprised when by Day 5, the plain canned peaches had already sprouted mold! By Day 14, the regular peaches were almost completely covered in white and green mold, and the spiced peaches were a bit dried out but there was not a speck of mold on them.

Conclusion: Adding extra spices certainly served to extend the life of canned peaches.
