
Texas means cattle, and great big generous servings of
barbecued beef. It's not quite as moist as Memphis' pork, but there are plenty
of people who love it!
In Lockhart, Texas, outside of Austin, is Black's BBQ--"The Best BBQ in Texas."
It is an old family restaurant established in 1932. Black's BBQ claims, "It's
simple. You just need salt, pepper, and post oak." (The post oak is a locally
grown wood.) Their meats include brisket, pork ribs, ham, pork loin, and chicken.
Side dishes range from macaroni salad to black eyed peas and corn on the cob.
In Texas, you can go to a barbecued goat cook-off, or-- if you know where
to look-- eat barbecue that's been smoked in an old refrigerator.
