Illinois

One of our coaches grew up in Illinois, and she remembers
"barbecue" meaning mostly chicken, cooked in thick brown bottled sauce. But
if you're in Chicago and craving pork, you can try Carson's,The Place for Ribs.
The only surprise for Memphians will be the side dishes--they're all potatoes!
Carson's serves its barbecue with potato skins, baked potatoes or even potatoes
au gratin.
