Main Course

 

Rice and Salmon with Pineapple Relish

Rice:

2 cups of chicken broth

1 cup of rice

Bring broth to a boil and add rice. Cover and simmer for 20 minutes.

Pineapple Relish:

1 16 oz. can of pineapples

1 tablespoon of honey

1 cup of raisins

Bring all of the above ingredients to a boil and cook for 15 minutes

 

Salmon

1 pound of salmon

1 clove of garlic

salt/pepper

Put salmon in dish with above ingredients and cook at 350 degrees for 20 minutes.

Serve with rice and garnish with pineapple relish
