Many of the interesting foods we have in the United States come from different lands. Here are some of the recipes from mining communities. Click on the words below to check out, and maybe even try some different kinds of foods. It's not burgers and fries!
Pasty , a kind of turn-over, was carried in the pockets of Cornish miners.
Clotted Cream is also a Cornish food.
Clotted Cream is just a very thick...clotted...cream gotten through the scalding of cream.
Potato Dumplings (Kartoflane Kluski)
2 cups mashed potatoes
1/3 cup fine, dry bread crumbs
2 egg yolks
3/4 tsp salt
1/4 tsp pepper
1/3 cup flour
2 egg whites, beaten until stiff, but not dry
Separately- 1/2 cup chopped onion, 2 tbsp butter
1- mix all ingredients in large bowl in the order given
2- place mixture on a floured board, and cut into 2-3 inch pieces
3- drop into boiling salted water. Cook until dumplings float to the top. Remove and drain
4-Saute onions in butter.
5-Add dumplings to onions, fry until heated through and golden brown
Potato Dumplings are a Polish recipe. Potatoes were a staple food there.
