Lemon and Garlic Potato Salad

This recipe feeds four people.

Ingredients:

2 lbs. red potatoes

1/4 cup chopped parsley

4 or 5 chopped garlic cloves minced

Juice of 2 lemons

4 tablespoons vegetable oil

Salt and Pepper to your taste

Method:

Boil red potatoes and cool.  Cut into bite size pieces.  Add remaining ingredients and mix well. Chill and serve.
