Baked Souffle Potato

3 cups mashed potatoes (about 6 medium)

1 egg, beaten

1/2 cup cream

3 tablespoons grated union

salt and pepper to taste

Add cream to beaten egg, then beat in mashed potato, salt, pepper, and onion. Continue beating until light and fluffy, pile into a buttered baking dish and bake in 400 until brown, about 15 minutes if mashed potatoes were hot. If cold, leftover mashed potatoes are used, increase baking time to 20 minutes in 375 oven. Serves 6. Adding 1 1/2 cups ground meat, or flaked canned salmon or even drained whole-kernel corn makes this a fine supper dish.
