Cookies

Apple Butter Cookies

1/4 Cup Shortening
2/3 Cup light brown sugar, well packed
1 egg, beaten
1/4 cup apple butter
1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon any baking powder
1/2 teaspoon salt
2 tablespoons milk
1 cup uncooked oatmeal
1/2 cup chopped nutmeats
1/2 cup seedless raisins, chopped

Cream shortening and sugar. Beat in egg, then apple butter. Sift together the flour, soda, baking powder, and salt and add the oatmeal, nuts, and raisins. Drop from teaaspoon onto greased cookie sheet and bake about 15 minutes in 375 oven. Makes about three dozen.

 

Oatmeal Fruit Cookies

2/3 cup shortening, softened
1 cup sugar
2 eggs, beaten
1 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/2 cup milk
1 1/2 cups uncooked oatmeal
1 cup seedless raisins
1/2 cup chopped nutmeats

Cream shortening with the sugar, then beat in eggs. Sift the flour with the soda, salt, and cinnamon, and add to first mixture with the 1/2 cup milk. Mix well, then stir in oatmeal, raisins, and nuts. Drop from teaspoon onto greased cookie sheet nd bake at 400 ovem for about 15 minutes. Makes bout 4 dozen.

 

Raisin Spice Cookies

1 cup seedless raisins
1/2 cup raisin water
1 cup light brown sugar
1 egg, beaten
1/2 cup shortening, softened
teaspoon baking soda
2 1/4 cups of flour
1/2 teaspoon cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon nutmeg
pinch of salt

Simmer raisins for 20 minutes in water barely covering. Drain well and reserve 1/2 cup of the water. Cream shortening,sugar, and egg together, mixing well. Sift baking soda with flour, spices and salt and add to first mixture alterately withraisin water. Add raisins. Drop from teaspoon onto greased cookie sheet and bake about 15 minutes in 375 oven. Makes about 4 dozen.
