To learn more about turkeys we interviewed Robert Kauffman from the Kauffman Turkey Farms in Waterman, Illinois. The Kauffman Turkey Farms began operation in 1933 when Howard Kauffman started with his first flock of turkeys. The Kauffman Turkey Farms are believed to be the largest in the state of Illinois at this time.

The turkeys raised here are natural, but they are not organic. The turkeys are raised range free until after Thanksgiving because the weather gets too cold and they must be protected.
