BREAKFAST CASSEROLE

SERVES: 6

NOTE: Prepare the night before.

INGREDIENTS:

  • 2 cups croutons
  • 1 lb. sausage
  • 1 cup grated cheese
  • 6 eggs
  • 2 cups milk
  • 1 tsp. salt
  • 1 tsp. dry mustard

DIRECTIONS:

Spread croutons on bottom of greased baking dish. Sprinkle sausage and cheese over croutons. Combine remaining ingredients and pour over the top. Cover and refrigerate overnight. Bake in the morning at 350 degrees for 50 minutes.


BAKED MACARONI AND CHEESE

SERVES: 6

INGREDIENTS:

  • 1 lb. ziti rigati pasta (with ridges)
  • 1 lb. Velveeta cheese
  • 1 qt. milk
  • 1 egg
  • 1 TBSP cornstarch
  • 1 stick butter

DIRECTIONS:

Boil ziti per package directions, drain. In baking dish, layer ziti, cheese, and butter. Combine milk, egg, and corn starch. Pour mixture over top. Bake at 375 degrees for 1 1/2 hours.


TACOS

INGREDIENTS:

  • 1 lb. ground beef
  • 1 12-15 oz. can refried beans
  • 1 tsp. onion powder
  • 1 tsp. chili powder
  • 2 cups shredded cheese
  • 10-15 flower tortillas
  • 2-3 cups vegetable oil
  • Diced tomatos
  • Shredded lettuce
  • Medium or hot taco sauce
  • Flat tooth picks

DIRECTIONS:

Brown ground beef with onion and chili powder, drain off excess fat. Add one can refried beans, simmer on low heat for 15 min. Fill flower tortillas with ground beef filling, fold in half, attach edges together with tooth picks. Pan fry each taco in vegatable oil until light brown on each side. Drain on paper towels. Remove tooth picks. Top with cheese, tomatos, lettuce, and taco sauce.


GOULASH

SERVES: 8

INGREDIENTS:

  • 1 lb.ground beef
  • 1 medium chopped pepper
  • 1 medium chopped onion
  • 1 can tomato soup
  • 1 can stewed tomatoes
  • pinch of salt, pepper and oregano
  • 1 lb. of pasta (shells)

 

DIRECTIONS:

Fry beef in a pan with onions and peppers.Boil pasta and drain.Combine all ingredients in a casserole dish.Bake uncovered for 20-30 minutes at 350 degrees.


EASY STROGANOFF

SERVES: 8

INGREDIENTS:

  • 1 lb. ground beef
  • 1 chopped onion
  • 1 can condensed cream of chicken soup
  • 1 cup sour cream

DIRECTIONS:

Brown beef and onions.Add soup and sour cream-heat through.Serve over noodles.


CARIBBEAN PORK CHOPS

SERVES: 4

INGREDIENTS:

  • 4 boneless pork chops (about 1 lb.)
  • 1/3 cup chopped onion
  • 2/3 cup water
  • 1/3 cup lemon juice
  • 1 TBSP vegetable oil
  • 2 tsp. cayenne pepper
  • 3/4 tsp. allspice
  • 3/4 tps. cinnamon
  • 3/4 tsp. thyme
  • 3/4 tsp. black pepper

DIRECTIONS:

Place meat in a plastic bag or shallow dish. Combine remaining ingredients and pour over meat. Cover and marinate in refrigerator at least 4 hours. Remove meat from marinade and grill or broil as desired. Heat marinade and use to baste meat while cooking.

NOTE: Serve with warm applesauce.
