Spaghetti With Sauce
                  1 lb. Spaghetti 
               1 lbs. ground Chicken Breast, Turkey Breast or very lean Beef 
               4 large Roma Tomatoes or 2-3 regular tomatoes - diced 
               2-4 cloves of Garlic - pressed or finely diced 
               1 small onion - finely diced 
               Basil and Oregano - to taste (fresh if you can find it) 
               Pepper and Salt (optional) - to taste 
               1 cup de-fatted Chicken Stock 
               Spray Olive Oil 
               1-2 tbsp. water 

          Cook Spaghetti to taste. Place ground meat and water in a deep sauté pan and heat on high until meat begins to brown. Remove the meat to a strainer and rinse under very hot water to remove any excess fat. Return to pan and finish browning, then remove and set aside. Heat pan and spray with oil. Add garlic and onion and sauté until they begin to soften. Be careful not to burn the garlic. Add Seasonings. Add tomatoes and mix well. Continue to cook until the tomatoes have soften and given off their juice (about 10 minutes). Add the meat back in and stir. Add chicken stock and let simmer until your pasta is ready. Drain pasta and either mix the sauce into it or serve with the sauce on top.
