Seafood Salad
              1/4 lbs. medium Shrimp - peeled and de-veined 
               1/2 lbs. imitation Crab Meat - cut into a large dice 
               1 small Carrot - grated 
               1 stalk of Celery (optional) - diced 
               1 Scallion or Green Onion - thinly sliced 
               1to 2 tblsp. Low-Fat, Low-Cholesterol Mayonnaise 
               1/2 tsp. Stone Ground or Brown Mustard 
               1/2 tsp. Old Bay Seasonings (optional) 
               1/4 tsp. Lemon Juice (optional) 
               Season Salt, Garlic Powder, Black Pepper and Dill - to taste 

          In a small sauce pan add just enough water to cover the shrimp, and old bay seasoning and bring to a boil.  Remove from heat, drain and rinse or submerge in cold water until completely cooled. Roughly chop the shrimp and add to a large bowl. Add imitation crab meat carrot, celery and scallion, combine thoroughly. Add the rest of the ingredients and combine well. Can be served immediately or chilled.
