Chicken Nuggets
Most people think of fast food chicken nuggets that are deep fried in oil and have a heavy batter coating on them. These nuggets are baked, have a crunchy crumb coating and are great for you.  They also make a terrific appetizer for your next party.

1 lbs. of Chicken Breasts (the white meat) - cut into 2" squares 
1 to 1 1/2 cups of Bread crumbs 
1/2 cup of light Biscuit Mix 
1/4 cup of no-fat Milk or Water 
Spray Oil 
1 Plastic Bag - you can use a regular or zipper-loc kind 

Pre-heat the oven to 350 degrees. Spray a cookie sheet with the spray oil. In a small bowl, put the biscuit mix make a well and pour in the milk or water in and stir. Making sure there are no lumps and the biscuit mix is like a creamy soup. Put the bread crumbs in the bag. Dip the chicken pieces, one at a time, into the bowl and then in the bag of bread crumbs. Shake until well coated with bread crumbs. Arrange them on the cookie sheet so they are not touching. Let them cook for 15 minutes or until they are golden brown (depending on your oven you may want to turn them with a spatula half way through. This recipe will make about 1 doz. nuggets
