Spanish Potato Omelet
Ingredientsa la Grandma Sita 6 eggs 8-10 large potatoes 1 small onion 1 4-ounce jar of diced pimentos 1/2 cup olive oil salt and pepper to taste Directions 1) Peel and thinly slice the potatoes. 2) Coat the bottom of a 10" omelet pan with olive oil and preheat. 3) Cover the bottom of the frying pan with potatoes. Heat until cooked. Remove to bowl. 4) Cook all potatoes this way, a layer at a time. 5) In the meantime beat the 6 eggs in a bowl and thinly slice the onion. 6) Once all potatoes are cooked and removed, sauté onions in oil and add half the jar of pimentos. Lower to simmer. 8) Add to the onions, 1/4 of egg mixture. 9) Continue to add layers of potatoes and egg until finished. 10) Cook until firm and moves in the pan. 11) Use large plate to flip the omelet and put back in pan. 12) Cook on simmer until done - about 5 more minutes. 13) Remove from pan and serve. |
