Recipe for Italian Cheesecake

You will need

16oz of Ricotta cheese
1 dozen of eggs
1 cup of sugar
1/3 oz of anise
1 pie crust for a 8 or 9 inch diameter pie
Cooking

        Preheat the oven to 350o F. Beat ricotta cheese and sugar until batter is smooth. Beat in eggs, one at a time, until well blended. Fold anise flavoring into mix. Place piecrust in a 8 or 9 inch spring form pan. Pour in mixture. Bake for 20 minutes at 350o F, turn oven down to 325o F and bake for 50 minutes or until golden brown.  Inserted a clean knife and if it comes out clean, the cheesecake is done.
