Plantains Stuffed With Shrimp

 In Spanish this recipe is called Platanos rellenos con Camarones. This is a well-known recipe on the island of Puerto Rico. This dish is usually served as an appetizer. This is the recipe.

Ingredients

1. 6 green plantains
2. 1-2 cups of diced tomatoes
3. 1/2 cup of diced onions
4. 1/2 cup of diced green pepper
5. 1 tablespoon of fresh chopped garlic
6. 2 tablespoons of cilantro(fresh parsley)
7. 2 pounds of medium De-vined shrimp oil

Recommended tools

1. 1 deep fryer
2. 1 tostonera

Steps

1. Dice vegetables and set aside.
2. Peel plantains and make about 2 inches wide.
3. Deep fry plantains for 5-7 minutes.
4. Remove from oil and mash in tostones Plantains are shaped into cups (return to fryer for 2-3 minutes or until golden.
5. In a pan sauté garlic, onions and pepper.
6. Add shrimp when pink and let tomatoes simmer for about 15-20 minutes
7. Fill plantain shells
8. Serve immediately

Serves 4-6 people
