V. SWEET AND SOUR SPARE RIBS
Ingredients:
1. 1lb pork spare rib
2. 6 tsp. of ketchup
3. 2 tsp. of soy sauce
4. 6 tsp. of sugar
5. 4 slices of ginger
6. 4 tsp. of cooking wine
7. 2 cups of cooking oil
8. 1/2 cup of flour
9. 1/2 cup of corn starch

Steps:
1. Boil the ribs with wine and ginger for 5 minutes
2. Take them out and let them dry for 10 minutes
3. Mix the flour and starch with 1 cup of water
4. Heat the oil in the pan
5. Dip the ribs in the flour mixture and put a few pieces at a time into the hot oil
6. Fry each one for 1 minute
7. When all the ribs are fried, discard the oil
8. Put all the ribs back into the pan and add ketchup, soy sauce, and sugar
9. After cooking for 2 minutes it's ready to serve
