XV. Red Sweet Pork (Hong Shao Rou)

 This recipe is from China. Practically everybody in my family and my partner's family know this wonderful and tasty recipe. It was passed down from my ancestors not knowing the amount of the ingredients to use, but just following their spirits. My ancestor never told her children the recipe. The children just watched their mother cooking it. That is why it is a tradition in my family.

Ingredients:
1. 12 ounce pork meat (cut into pieces)
2. 2 tablespoons of soybean sauce
3. 1 tablespoon of cooking wine
4. 1 tablespoon of sugar
5. 1 tablespoon of soybean oil
6. 1 clove of garlic
7. 1 clove of ginger
8. Any vegetables
9. 2 cups of water

Steps:
1. Put the pork into boiled water for 1 minute. Drain the water.
2. Wash the pork with cold water, drain again. Use pots for both procedure s.
3. Wok-fry the garlic and ginger with soybean oil for thirty seconds.
4. Take out the garlic and ginger .
5. Use the same oil to Wok-fry the pork for about two minutes .
6. Put all the rest of the ingredients into the Wok including the garlic and the ginger.
7. Cook for an hour using a low fire .
9. Enjoy.
