*South-of-the-Border Chocolate*

1\4 teaspoon cinnamon

1 tsp. vanilla

1\3 cup cocoa

1 qt. milk

1/2 cup sugar

1 tsp. whipped topping

1 tablespoon instant decaffeinated coffee

1 tsp. nutmeg

In saucepan, heat milk untill it is hot, but not boiling,mix together cocoa,sugar,coffe,cinnamon in a small bowl.Add two tbsp. of hot milk to the chocolate mixture and stir untill it is smooth.Blend the chocolate mixture into the remaining milk. Remove the heat,add vanilla,and beat the mixture with a wire whisk untill it is frothy.To serve, fill cubs with hot chocolate, add a spoon full of whipped topping to each and sprinkle with nutmeg.

 

*~Chocolate Fudge~*

double boiler

1/8 tsp. of vanilla

1 can of condensed milk

shallow baking dish

2 packages of semisweet chocolate

 

Rub a pat of butter or margarine over the bottom and around the sides of the shallow baking dish. Fill the bottom part of a double boiler halfway with water. With help, place it over a high flame. When water begins to boil, put the chocolate in the top part of the double boiler and fit it into the bottom part. The heat from the boiling water witll melt the chocolate. After the chocolate has melted, add milk and salt to it and stir. Stir the mixture as it cooks for about ten minutes. Take the top part of the double boiler off the stove.

 

  *~Chocolate Cheese Pie~*

1 package 3oz. cream cheese (softened)

1/2 cold whipping cream

3/4 cup sugar

Cherry pie filling

2 eggs

1 pkg.crumbed crust 6oz.

1 tsp. vanilla extract

1/4 cup Hershey's cocoa

Makes 6-8 servings

1. Heat oven to 350 degrees farenheit

2. Beat cream, cheese, sugar, and vanilla in a large bowl until well blended. Add cocoa, beat until well blended, scraping sides of bowl and beat frequently. Add eggs, beat well. Stir in whipping cream. Pour in crust.

3. Bake 35-40 minutes (center will be soft, but will set upon cooling). Cool to room temperature, cover, refrigerate any leftover pie.
