Sweeters and other substances which change taste
The most famous synthetic sweeter is called saccharin. Its sweet taste was found in 1879; it was immediately patented and just several years after, its mass production was acknowledged. It was widely used during world war I. Saccharin is about 300-500 times sweeter than sugar, but it tastes a little bit bitter and that’s why it is used usually together with other different spices. There are a lot of doubts that it helps the development of cancer diseases, and therefore its usage is rarely recommended. Similar to saccharin in structure is the acesulfam. It is about 150 times sweeter than sugar and according to the data collected till now it looks like safe. |
