What is the role of the food service?
The Galesburg High School madrigal dinner is presented each year with the cooperation of the music department, the art department, and the food service department. The music director selects the menu. Some of the food fits with the music being presented. Wassail is spice apple juice, figgie pudding is bread pudding and game fowl is cornish hen with orange sauce. The remainder of the meal is rounded out with barley soup, wild rice, green bean almondine, dinner rolls and fruit compote. There were no recipes that we know of during medieval times. 

How is the room set up?
The choir transforms the cafeteria dinning room into the inside of a castle with the help of the art department. The students set up tables and cover them with table clothes, napkins, candles, and favors for the guests. There is a head table set up for the royalty of the castle. 

What makes the night go smoothly?
The food service department prepares the food that is served and sets the tables. It requires two chefs and eight kitchen staff to get everything ready on time. Reservations are made in advance of the dinner. This is a must for everything to go smoothly. There are two performances with about 145 guests at each dinner. The food and the music are synchronized as much as possible once the dinner begins. 

What advice would you offer for people starting a madrigal?
The madrigal dinner is a great accomplishment. It would not be possible without the hard work and direction of the music director and the cooperation of the art department and the food service department. It is a wonderful experience. If anyone wants to have a madrigal dinner, I would say start small and grow bigger each year.
