[The Main Kitchen] Bamboo Steamers/Trays (Ching-Lung)

These round trays with sides of wood and bottoms of bamboo slats are great steamers! The texture of bamboo allows steam to circulate and evaporate so that less moisture will form on the inside of the lid. Nowadays, there are also modern tiered steamers that make steaming more convenient and productive.

Using the Steamer

1) Pile a set of bamboo steamers one on top of the other
2) Fill a wok with boiling water
3) Set the steamers on a rack and put them into the wok to steam
4) The water should be replaced when it evaporates during cooking


Serving food with steamers

You may line the steamer with cheesecloth and place food on top of it for cooking, or simply place the steamer onto plates when serving. Restaurants usually serve dim sum (little snacks) in steamers.

Cleaning the steamer

Simply rinse it with water, since the bamboo will absorb the flavor of the soap if you use detergent!
