[The Main Kitchen] Chinese tools and utensils

Chinese cooking owed its artistry to its extraordinary utensils, let alone the traditional ones. But today, as Eastern and Western cultures meet, some of the Western cookery tools are also used for cooking Chinese food.

Essential tools for cooking Chinese cuisine:
  • a seasoning tray with jugs of salt, sugar, corn flour, light soy sauce, dark soy sauce, oil, and pepper

  • wok + wok chaan + wok cover

  • different kinds of cleavers + chopping board

  • a rolling pin including a classic pin (fusiform) which is a rod thickened towards the middle

  • modern pin which is a rod with handles at both sides and used for rolling out wonton skins

  • colander (plastic/wire-mesh)

  • mortar + pestle (substitute of the cleaver)

  • ladles (solid/wire-mesh)

  • rice cookers

  • saucepans

  • wide-blade spatula

  • frying strainer

  • bamboo chopsticks


  • And utensils for making special meals on festive occasions are:
  • mooncake pressers (for molding mooncakes in the Mid-Autumn Festival)

  • sand pot/earthenware pot

  • thin cake pressers

  • waffle irons

  • egg whisk (a circle of spiraled wire on a handle)
