[The Main Kitchen] The Stove
Stoves have been used in China since the Han Dynasty. They are the foundation of traditional Chinese kitchens. Usually made of rock or brick, the old stoves were rectangular in shape. Below is a format of a traditional home stove:

traditional pottery stoves made of iron or steel pots
tiny kerosene stoves
These different stoves had been popular at one time or another. And as time passes, kerosene stoves had overtaken the traditional ones. Chinese cooking has come a long way since the invention of stoves. For one reason, fried cuisine is crispier when done with the right flame. Pans can be fixed tightly on the burners so that the heat would not escape during the process of cooking. For another, cookery can be more economical as a little bit of poor fuel will be sufficient for cooking a lot of food.
