[West] Special Ingredients

As the food is so spicy, it isn't really such a surprise that lots and lots of spices are used to make that delicious kind of spiciness. These include:
  • chili peppers

  • brown peppers

  • cassia

  • star anise

  • five-spice

  • coriander leaves


  • Garlic In the past (actually it's starting from the 17th century), the people in western China used chili peppers to make that spicy flavour. Now all kinds of spices are used, including those mentioned above.

    Other things that are often cooked are:
  • rice

  • noodles

  • pork

  • cabbages

  • white radishes

  • river fish (coming from the Yangtze River)

    There is also food from the forests around the region:
  • wild roots

  • wild herbs

  • bamboo shoots

  • game
