Such a special kind of cuisine undoubtedly has its own special characteristics. Cantonese food:

It is well known that people of southern China like to have their food as fresh as possible. Some people even go to the market twice a day just to make sure that the food is fresh!

isn't spicy
uses sauces instead of spices to add more flavour
A lot of people might not know this, but a lot of sauces that are used in other regions for flavouring actually come from Guangzhou. For example, there is the chili sauce, the mustard sauce, the oyster sauce, and the soy sauce.
