[North] Special Cooking Methods

There are mainly four types of cooking methods in northern China:
  • Frying

  • Stewing

  • Braising

  • Quick, dry frying, without oil.


  • The quick, dry frying of northern China is an excellent way of cooking meat. It:
  • gives the food a smoky, burnt flavour

  • lets the meat blend in with other ingredients

  • adds flavour to the meat

  • at the same time keeps the meat tender


  • examples:
    Lamb with Leeks
    Fried Pork Balls, which are small meat balls with crisp outside and a juicy inside.
