[North] Special Cooking Methods
There are mainly four types of cooking methods in northern China:
Quick, dry frying, without oil.
The quick, dry frying of northern China is an excellent way of cooking meat. It:
gives the food a smoky, burnt flavour
lets the meat blend in with other ingredients
adds flavour to the meat
at the same time keeps the meat tender
