[North] Characteristics
Pekingnese cuisine has its own special characteristics. It:
is slightly saltier than other cuisines
is not greasy
is not spicy
has a lot of lamb and mutton dishes
Why are there so many lamb or mutton dishes in northern China?
Long ago, in the Yuen Dynasty, the Mongols ruled over China. They brought some of their lamb and mutton dishes with them.
There is also a large variety of delicious dishes in northern China. This is because Peking was, and still is, the capital of China. The emperor lived there and so naturally, there are lots of famous and yummy dishes there.
