[North] Introduction



Unlike southern China, the staple food in the north is bread, noodles or other wheat products (e.g. dumplings, buns)
Why?
The weather in the north is cold, which is unsuitable for growing rice. The farmers grow wheat instead.

We will focus mainly on Pekingnese dishes for the cuisine of northern China.
