Sweet and Sour Stir Fried Fish

Ingredients
| 1 pound fresh sea bass, dressed | 3 Tbsp. vinegar |
| 1 large can pineapple chunks | 3 Tbsp. dry sherry |
| 1/4 cup packed brown sugar | 2 Tbsp. cornstarch |
| 1 cup catsup | 2 Tbsp. cooking oil |
| 1/4 cup soy sauce | 1 medium green pepper, cut into strips |
| 2 cups hot cooked rice |
Preparation
Cut fish into 1-inch pieces. Drain pineapple, reserving 3/4 cup of liquid. Combine reserved juice, brown sugar, catsup, soy sauce, vinegar, sherry, and cornstarch. Set aside. Preheat wok (or large skillet) over high heat; add 1 tablespoon cooking oil. Stir-fry pepper for 1-2 minutes. Remove pepper. Add remainder of oil. Stir-fry fish for 3-5 minutes or until fish flakes easily. Remove fish. Add sauce to wok. Cook and stir until bubbly hot. Stir in pineapple chunks, fish, and peppers. Heat for 1-2 minutes.
Serve over rice. Serves 4
