Southern Pan-Fried Flounder

Ingredients

1 (2 to 3 lb.) flounder, dressed 2 Tbsp. salt
1 cup shortening 1/2 cup corn meal

Preparation

Cut fish into serving pieces. Place shortening in large frypan over medium heat. Mix salt and corn meal; roll fish in corn meal mixture. Drop into frypan; fry until golden brown on both sides. (approx. 3-4 minutes)Serve with hushpuppies, cole slaw.
