Southern Pan-Fried Flounder

Ingredients
| 1 (2 to 3 lb.) flounder, dressed | 2 Tbsp. salt |
| 1 cup shortening | 1/2 cup corn meal |
Preparation
Cut fish into serving pieces. Place shortening in large frypan over medium heat. Mix salt and corn meal; roll fish in corn meal mixture. Drop into frypan; fry until golden brown on both sides. (approx. 3-4 minutes)
Serve with hushpuppies, cole slaw.
