Pan-Fried Fish

Ingredients
| 1 lb. fresh fish, dressed 1/2 to 1 inch thick |
2/3 cups corn meal |
| 1 beaten egg | Shortening |
Preparation
Cut fish into serving pieces (smaller fish may be cooked whole). Pat dry with a paper towel. Combine egg with 2 tablespoons water. On waxed paper, mix cornmeal 1/2 tsp. salt, and dash pepper. Dip fish into egg mixture, then dredge in corn meal mixture. In a large skillet, heat 1/4 inch melted shortening. Fry fish on one side (4-6 minutes) till golden then turn gently. Fish is done when it flakes easily with a fork. Drain on paper towels. May be kept warm in a low heat oven for a short period of time.
Serve with hush puppies and chips (deep fried potato strips).
