Why Cheese Is Aged

Cheese is aged because the longer the cheese is aged, the sharper its taste becomes. Cheese is aged in either a storage room or a warehouse that has its temperature and humidity controlled. Aging times may vary for different cheeses. For example, brick cheeses and others need two months to age. Parmesan requires about a year.
Aging the cheeses develops its taste and texture. So, it is aged to sharpen the cheese's flavor.
