Sherbet and Sorbet
Sherbet comes from Arabic and means "drink." There are two kinds of sherbet: 1. Ice sherbet 2. Sorbet which are both made without aeration (air beaten in). It is a more solid product, yet has a lighter taste, because it has little or no milk or cream content. It is made from sweetened fruit juice, fruit, and water. It requires gelatin or/and egg whites to insure the smoothness.
