Meaty Mushroom Stroganoff

1 pound uncooked fettuccine
1 / 3 cup water
1 large onion, chopped
1 pound sliced fresh mushrooms
1 8 ounce package of Seitan (fake beef) thawed and sliced
Good brands available at Down To Earth: White Wave or Upcountry.
Andy in the freezer department will help you.
Dash of cayenne pepper
2 tablespoons white wine
2 tablespoons soy sauce
1 cup soy milk
1 cup vegetable broth
2 TBS cornstarch in 1 / 4 cup cold water

Put on a large pot of water to boil. Drop the fettuccine into boiling water and cook according to package directions. Drain and rinse. Place the water and onion in a large nonstick frying pan and cook for 2 ­ 3 minutes. Add mushrooms and cook until slightly limp. Add remaining ingredients, except the cornstarch mixture. Mix. Cover and cook over low heat for 20 minutes, stirring occasionally. Add cornstarch mix, cook, stir until thickened.

Serve over fettuccine.
