HEALTHY HOLIDAY PLATTER
12 SERVINGS
* 1 large carrot, julienned
* 2 stalks celery, julienned
* 1 cup broccoli florets
* 1 cup green beans, trimmed
* 1 cup snow peas
* 2 cups cherry tomatoes
* 1 small zucchini, sliced diagonally
* 1 cup soft tofu (pureed)
* 2 tsp. minced green onions
* 1 tsp. minced garlic
* 1 tsp. stone ground Dijon mustard
* 1 tsp. dry tarragon
* salt to taste
* 1 large bell pepper, top cut off and seeds removed
Blanch broccoli and green beans in boiling water until bright green, about 30 seconds.
Remove and dip in ice water.
Arrange all the vegetables on serving platter. In a small bowl mix pureed tofu, green
onions, garlic, mustard, and tarragon. Spoon mixture into the bell pepper. Set bell pepper
in platter in center of the vegetables.
