Zwiebelkuchen (pronounced tsvee bell koo ken) is a pie like dish that is traditionally eaten around Karneval. What you will need: 1/4 pound smoked bacon (diced) 1 meduim onion (chopped in small peices) 2 eggs 1 cup sour cream 1 tbs flour 1/4 tsp salt 1/4 tsp pepper 9" pie crust (recipe below)
Saute' the bacon until crisp. Drain most of the fat, leaving just enough for the onions. Saute' the onions in the same pan until clear. Set them aside and allow to cool. Whip the eggs with the sour cream, salt, pepper and flour until combined. With a fork, prick the bottom of the crust. Place the onions and the bacon over the crust and then pour the egg mixture over the top. Bake at 200C or 400F for 15 minutes, and then lower the heat to 175C or 350F for an additional 15 minutes or until the pie is browned and the egg is set. This pie should be seved hot. Pie crust 1/1/2 cups flour 1/3 cup shortning (or a mixture of butter and shortning) about 5 Tbs very cold water In a bowl, cut the shortning into the flour using a pastry blender. (or a knife and fork) Keep cutting until the mixture resembles coarse crumbs. Add the water a few tablesoppns at a time and gently toss it with a fork. Keep adding the water until it forms a ball. (dough will appear to be dry) Be careful not to over work the dough. Place the dough on a floured surface and roll it out into about 30cm or 12 inches in diameter. fold the dough carefully, wrap with plastic wrap and then chill for 10 minutes in the refrigerator. Unwrap and then place a pie plate, and trim the edges.
