Spätzle (pronounced shpet sla ) is a irregularly shaped noodle that is formed by pressing a batter through a spätzle grater or a colendar.

What you will need

4-5 cups all purpose flour* 1 cup (250ml) water

4 large eggs

1 tsp salt

*Note: the flour quantity depends on factors like humidity, so when mixing, add enough flour for the proper consistancy.

Procedures

1. Mix the flour, eggs, water and salt in a bowl. Keep stiring until the batter is thick and elastic, adding flour as nessary.

2. Place the spätzle maker* over a pot of geltly boiling water. Add some of the batter to the holding cup and slowly grate. When the spätzle float to the surface remove them with a slotted spoon. Repeat, until all of the batter is used.

*Note: If you don't have a spätzle maker you can use a colander. Hold the colander over the pot, add the batter and push the batter through the holes with a wooden spoon.

Serve

You can toss the spätzle with butter and/or cheese and top it with carmalized onions.
