The early method from the Native African tribes.In the years of the great trek , and during the South African wars, biltong played a big role in the dailydiet and it was often the only food which saved people from starvation.Today,bilton is delicacy and one of the favourite snacks in South Africa.Biltong is made from all kinds of game.The most popular one however,is the one made from beef . The best cuts ofr biltong are obtained from the hind quaters.
Processing of biltong: The meat is cut into strips of not more than 20mm thickness.Too thick a piece can spoil in the centre before it is dried.Before drying , the meat strips must be salted.This is either done in a brine solution or by dry salting.
Drying of the biltong:The best biltong is obtained when it is dried slowly, and not under too hot conditions.Biltong dried in winter when temperatures are low, has proven to be better in flavour than the one dried in the summer heat.Biltong should be dried in a place where a good air circulation is guaranteed.The drier the meat becomes, the better in will be preserved.Fermantation and bacteria multiplication wil reduce to a minimum.
Variety of traditional South African foods are prepared in the home and enjoyed by a large number of the family.
The food is obviously prepared in clean containers which have been washed thorough ly with soap and water.As usual before eating or cooking vegetables they are also washed.The food is served immediately after preparation.There are various common ways for South Africa and other countries like to prepare food include frying, barbecuing and serving foods with relish(GRAVY) and sauces.Home-baked cakes are common.
