  Description

Chinese white shrimp are also called fleshy prawns. In the wild Chinese white can grow to 18 cm (7 in). They are generally harvested at small or medium sizes. Chinese white have whitish tail meat covered by a translucent shell.

Much of the Chinese white industry was devastated by disease. Former Chinese white harvesters have diversified to other shrimp species.

The Chinese white shrimp industry has been devastated by disease. U.S. imports have dropped from 109 million lbs in 1992 to 32 million lbs in 1993. Production may begin to increase but not to former levels, at least not immediately Black spots, called melanosis, indicate the shell and meat has begun to decay. This is a sign of poor handling. Shrimp need to be immediatly processed or frozen after harvest to maintain freshness.
