  Description

Lemon flounders have different names depending upon their size. Lemon soles under 450 g (1lb) are called inshore blackbacks or peewees. Lemon soles between 1 and 2 kg (2-4 lbs) are called Georges flounder. Lemon soles over 2 kg (4 lbs) are called lemon soles. The lemon flounder is left eyed and develops in a pattern opposite that of the dab flounder. Early in the development of the lemon sole flounder the eyes migrate to the left side of the fish and the fish begins to swim on its right side. The bottom side of the fish turns light colored while the top turns dark to aid in camouflage.

The U.S harvests between 4,000 and 5,000 tons of lemon sole annually. Canada harvests between 1,500 and 2,000 tons per year.

Diet/Health Info

All known lemon sole stocks are over fished. In recent years the harvest of lemon sole flounders has decreased from 11,200, tons to 3,600 tons. Due to protectionary measures scientists believe that the lemon sole populations are recovering. Harvests are expected to remain steady with a slight increase as the stocks replenish themselves.
