Vegetarian Pizza

- 1 prepared pizza base
- 1/2 teaspoon dried oregano
- 1 tablespoon olive oil
- 1 large onion; halved, thinly sliced
- 2 cloves garlic; finely chopped
- 6 tomatoes; sliced
- 1 courgette; pared into ribbons
- 100g cheddar cheese; cubed
- seasoning
Heat the oil in a frying pan and fry the onions, oregano and garlic until the onions are lightly browned. Arrange the tomato slices evenly over the pizza bases and scatter the onion and garlic mixture over the top. Arrange the courgette ribbons and cheddar cheese over the onion mixture and season. Bake for 15-20 minutes or until golden and bubbling.
