Fresh Tomato Sauce

- 2lb/1kg ripe tomatoes
- 1 large onion; finely chopped
- 1 clove garlic
- 1/2 cup white wine
- 2oz/50g butter
- salt and pepper
- 1 tsp sugar
- basil leaves
Melt the butter and fry the onions and garlic until soft. Add shopped tomatoes and wine, salt and pepper and simmer for 30 minutes. Add basil and cook a further 5 minutes.
