- 1/2 cup Butter
- 1 cup sugar
- 3 ripe bananas
- 2 eggs
- 1 teas vanilla essence
- 2 cups self raising flour
- 1/4 cup milk
Prepare an 8 inch/20cm cake tin by lining with baking paper and greasing well. Sprinkle liberally with extra sugar. Turn on oven to medium heat.
Cream the butter and sugar until light and fluffy. Add the eggs, vanilla essencen and mix well then add the mashed bananas.
Fold in the flour alternately with the milk.
Pour mixture into prepared tin and bake for 40 minutes or until a skewer comes out clean when testing middle of cake.
When cool, lightly dust with icing sugar. Best served with whipped cream.
