Serving: Calories 296 (31% from fat) Carbohydrates 22g Protein 26g Soduim 700mg Fat 11g Cholesterol 57mg Serves 4 1 pound flank steak, trimmed and sliced into thin strips 2 teaspoons canola oil, divided 2 medium green bell peppers, cut into 1/2-inch squares (about 2 cups) 4 thin slice fresh ginger or 1/4 teaspoon ground ginger 1 cup hot cooked white rice For marinade 1/4 cup reduced-sodium soy sauce 1 tablespoon rice vinegar 2 teaspoons granulated sugar 2 teaspoons cornstarch 1.To prepare marinade, in a large bowl, combine soy sauce, vinegar, sugar, and cornstarch. Mix well. Add steak; toss to coat. 2. In a large nonstick skillet or a wok, heat 1 teaspoonoil over medium-high heat until hot but not smoking. Add peppers; stir-fry, until crisp-tender, about 3 minutes. Usinga slotted spoon, place peppers on a plate. 3.Heat remaining oil in skillet. Add ginger; stir-fry for 30 seconds. Add steak with marinade. Stir-fry until steak is cooked through, about 2 to 3 minutes. Discard ginger. 4. Return peppers to skillet; stir-fry until heated through, about 1 minute. Place hot rice on a serving platter. Spoon peppers and steak over rice. Serve immediately. Miicrowave To reheat, Arrange peppers and steak, with leftover rice if desired, on a microwave safe plate. Microwave on high for 1 minute and serve.

Ingredients: 2 tbsp. vegetable oil, 1 pound uncooked shrimp, shelled and deveined, 1 1/2 tsp. lemon pepper seasoning, 1 tsp. garlic powder, 1 tsp. crushed dry basil, 4 tsp. vinegar, 1/2 cup green pepper, chopped, 1/2 cup red pepper, chopped, 1/2 cup yellow pepper, chopped Directions: Heat oil in large skillet or wok over medium-high heat. Add shrimp, spices, and vinegar and cook 3-5 minutes. Add vegetables. Sautee an additional 2 minutes until peppers are tender.

Ingredients: 1 medium eggplant, 2 medium zucchini, 2 ea. red and green peppers, 1 medium red onion, 2 tsp salt, 1 tsp pepper, 2 Tbsp herbs (eg tarragon & marjoram), 2 tsp garlic, crushed. Procedure: Cut vegetables into half-inch chunks or wedges and toss with seasonings. Thread onto metal or soaked bamboo skewers. Let sit for one half hour. Grill or broil until colour shows on vegetables, about 10-15 minutes.

Fill each pita bread half with 1/3 cup yogurt mixture and 1/4 of the beef and alfalfa sprouts.

Recipe Name:Low FaT Choclate cookies
Ingredients: 1 1/2 cups flour, 1/2 cup Sugar, 1/2 cup Unsweetened cocoa, 1/2 teaspoon baking soda, 1/2 teaspoon salt, 1/2 cup corn syrup, 3 egg whites Directions: Spray cookie sheet with cooking spray. In large bowl, combine flour, sugar, cocoa, baking soda and salt. Stir in corn syrup and egg whites until blended (dough will be thick and slightly sticky). Drop by rounded teaspoonfuls onto prepared cookie sheets. Bake in 350 F oven 7 to 9 minutes or just until set (cookies will be soft when pressed). Do not overbake. Cool on wire rack. Makes about 2-1/2 dozen

Ingredients: 4 cups tart apples, peeled and sliced 1/4 cup instant oatmeal 1/4 cup unbleached white flour 1/3 cup brown sugar 1/2 teaspoon cinnamon 1/4 teaspoon nutmeg 1 1/2 tablespoons margarine, softened Directions: Heat oven to 375 degrees. Spray 8 inch square baking pan with non-stick cooking spray. Spread apple slices to cover pan. Mix remaining ingredients thoroughly. Sprinkle over apples. Bake at 375 degrees for 30 minutes or until apples are tender and topping is golden brown. Sever warm with nonfat vanilla yogurt or frozen yogurt if desired.
